Can other nuts be used successfully for cream sauces besides cashews?
Almonds seem to sub in without much difference.
Walnuts are soft, similar to cashews, so they also blend up nicely. As an added bonus, they are one of the healthiest nuts, and have the most favorable omega-6 to omega-3 ratio of nuts.
I have used sunflower seeds. They work well. They are a little less sweet than cashews or almonds to my taste so I sometimes add a small amount of dates or raisins.
I find cannellini beans work great.
I’ve used almonds with the skin to make a recipe that called for cashews, it was great.
