|Coconut Cream Puffs|
These are really easy to make and are so light & fluffy.
A healthy treat for Valentine’s Day too
1 15oz can coconut cream**
1 cup shredded dried coconut
1-2 tablespoons maple syrup (or to your taste)
3/4 cup vegan chocolate chips
3 Tablespoons coconut oil.
Melt chocolate chips and coconut oil together over low heat.
Pour a little chocolate into a silicon muffin cup.
Place in refrigerator for 10 minutes to harden.
Pour coconut cream, shredded coconut & maple syrup in blender and mix until creamy and smooth.
Pour a little of the coconut mixture on top of hardened chocolate in each silicon muffin cup and then add more chocolate to either cover tops or drizzle chocolate onto tops of each.
Either eat right away or allow mixture to harden in refrigerator.
Store leftovers in covered container in refrigerator.
**If you cannot find coconut cream simply buy 4 cans coconut milk (15oz cans)and place in refrigerator overnight. Without shaking the cans, remove lid of cans and scrape out thick coconut cream and save coconut water for smoothies.
