I cook 4 eggs chopped, 1 small head cauliflower- chopped small, 6 larger pickles-chopped, 2 spoon mayonnaise. I can eat this every day it is much better then potato salad.

Eggs are the most nutritionally dense food you can get. Great choice.

I made traditional egg salad and put it in a Romain lettuce leaf wrap. Try it with a slice of medium cheddar cheese too. So yummy.

Yummy, also I make chicken salad and put hard boiled eggs, dill pickles, mayo, onions…yum.
