How many of you try and keep the rib meat when filleting a walleye? How many of you say forget it, and just cut the meat and the rib bones out? Tried keeping the rib meat today and it just didn’t seem worth it. Interested to see what others have to say.

I am slower than a lot of people filleting fish. But I take my time and try and salvage as much meat as possible.

Always save it if possible. I use an electric knife for everything. Works best to leave the skin on until the ribs are removed.

I zip the filet first then do the best I can on the rib side.

Get it all. I can get it all from perch,crappies and sunnies. Walleye has more there than those others.

I’m sure I’ll get slammed but….I personally don’t keep the rib meat. I’ve heard from a guy that worked in fisheries department , that’s were the mercury.. pesticides and herbicides collect in the belly meat.
