I’ve become vegetarian since July 2017 and trying to find a good alternative flour to make bread, my mother in-law is playing around with coconut flour, almond flour, chickpea flour etc… I was wondering what the closest any one has ever achieved?

I have the gluten free baking book and it has quite a few alternative gluten free mixes I like quite a few made with chick peas or fava beans for more protein.

Some kind of baking blend you make combining flours. Many recipes on Internet.

I understand fava bean can be strong so I make the garfava flour mix with garbanzo flour and fava bean flour mixed. It works well. So far I’ve used it in my bread machine.
