Every morning I have either a half a cup of white beans or a half a cup of red lentils stirred into my oatmeal. They kind of hide in there and I’m happy I’ve started out the day with one serving of legumes. I’ve also heard that adzuki beans may be a bit easier to digest than some others.
You can put them into smoothies and smoothie bowls. Use them in brownies and other deserts. There is almost always a bean and vegi salad in my frig and hummus for dipping. I also use the hummus as a base for salad dressing. Recently, I used tempeh as a substitute for meat in a tomato sauce. Last night, I made a chick pea curry with fruit and peanuts. Good luck!
