Trying really hard to reach at least 7 cups of veggies a day. Do you count spinach as a cup before or after you saute it? I sauteed 3 cups for breakfast and it ended up being about 1/2 cup. Also, other than spinach what are leafy greens I can get? I live in a tiny town and the only veggies available are cabbage, broccoli, cauliflower, spinach, Brussel sprouts, and zuchinni/squash.
