Was wondering how people store their bacon fat. Do you also strain it?

I just trash it if I’m not using it right away to cook an egg. It’s easy to go hog wild (see what I did there?) on fats in keto. The times I store it, it just ends up in the garbage anyway.

We pour it into a mug and keep it near the stove to use for cooking eggs or anything we like! Whenever we use it, we’re frying with it so I figure that the high heat would kill anything that could hurt me. Have been doing for years with no issues ?? I will note that I live in a generally cooler climate and the house is always around 15-20°C so this might work for us but not someone in a warmer climate.

I put it in a mason jar on the counter and use it when I need to fry and add some flavor. Spinach sauteed in bacon grease is really good!

I have a crock with a built in strainer. (Amazon) I was keeping it on the counter but it started smelling a little rancid so I dumped it and started again in the fridge.

Mason jar on the counter. Sometime strained, sometimes not. I usually go through it in about 2 weeks when I cook 2 lbs at a time.
