Ok, I’m changing my routine to 3 days a week on weights, 2 days in between on cardio / stretching. What should I do at weekends ? Total rest ? Gentle stretching ?

I always always suggest starting a garden if you have space!! even a raised bed or two. There is absolutely nothing more wonderful than digging, weeding, planting, harvesting, raking etc. for “active resting” and you get to eat and share!!
